The KitchenBiryani, Hyderabadi dum style
Basmati and chicken cooked together, sealed in the pot. With mirchi ka salan (green chilli in peanut-sesame gravy) and raita.

Gutti vankaya is Telugu for stuffed baby eggplant.
Tiffins & dosa
A thin, crisp rice-and-lentil crêpe folded around spiced potato.
Podi is a roasted lentil-and-chilli spice powder.

Chicken in fresh green herbs, with grilled onion and salad.
Bone-in, roasted in the clay oven.

Malty and fruity, with oak and gentle spice.

Lamps on, glasses out. A slower pour and a plate of something crisp.
Spiced fish, fried crisp, with salted green chillies.
Fried chicken with green chilli, red chilli sauce and yogurt.
Matured in American and European oak. Honeyed and rounded.
Vanilla and caramel. Good with cola, better with Thums Up.

Alcohol-free, with care
The drinks many of our Indian guests grew up with, and the ones new guests remember. Sweet or salted lassi cools chilli heat better than water.
